Squable - Must Try

The New Kid on the Block from Esteemed Lineage

Definitely worth the trip

Squable is the newest product of the partnership between award winning Justin Yu and Bobby Heugel. Located in the Heights, a definite must-try. Using the Resy app to make reservations is a really good idea because even though they explicitly say they'll save spots for walk-ins, this gem will have a long walk-in wait for sure.

The waiters and waitresses here are extremely knowledgeable about both the food and the drinks. By and large, we followed their recommendations and were not disappointed.

First off, was the dutch baby pancake with fresh citrus preserves. The pastry was light and crisp and the cheese and preserves provide a nice contrast.

The kampachi crudo was perfectly seasoned with a nice balance of sour. Was it something you couldn't get elsewhere in Houston, no. Was it a well executed dish, yes.

Our waiter recommended the focaccia. At first, my initial thought was - focaccia, I mean, how could this be, right? But I was wrong - the focaccia itself was a perfect balance of crisp and fluffy but the carrot spread was really something unique and flavorful.

Our waiter also recommended the broiled oysters - which I was expecting more of the traditional New Orleans take on broiled oysters but this was very different (in a good way). The oysters were tender and flavorful and they were bathed in a chicken broth that gave them a nice savory flavor.

OK, here's the dish YOU MUST order when you come here (unless you have some allergy to one of its components. The marinated mussels on grilled bread and calico beans was amazing. So unexpected - a really flavorful and complex dish that makes you want to order a second.

Lastly the half a chicken was recommended - while perfectly cooked, I'm not sure it stands out as a must-have there. The burger with raclette was really well executed and flavorful. The dessert we picked was the pan de mie - essentially the most ethereal amazing french toast you've ever had with a near bread pudding center. Of course with Bobby Heugel as one of the owner's the cocktails are superb as expected (and yes, our waiter photobombed the picture ;-)
